Rice and Vegetables with Pistachios, Dried Apricots, Almonds, Cranberries and Curry

Tasty, colourful and delicious side dish!


150 g brown rice
2 carrots (chopped)
1 leek (chopped)
1 head of broccoli (chopped)
2 tablespoons of olive oil
50 g Dried Apricots
50 g Dried Cranberries
20 g Whole Raw Natural Almonds
20 g Roasted Pistachios with Salt
1 tablespoon of curry powder


1) Boil the rice, drain, rinse and set aside.
2) Fry the vegetables in the oil.
3) Once they have softened, add the dried apricots, cranberries, pistachios and the almonds whole. 4
) Add the curry powder.
5) Stir well and serve
