Crunchy, chocolatey delicious banana loaf, perfect accompaniment with a cup of coffee or tea!
Ingredients
1/2 cup of softened butter
1 cup of sugar
2 eggs (beaten)
4 ripe bananas
1 1/2 cups of flour
1 teaspoon of baking soda
1/2 teaspoon of salt
1 teaspoon of vanilla extract
1 or 1/2 cup of chopped walnuts (add up to 1 cup for desired nuttiness) – California Walnut Pieces
1/2 cup of chocolate chips (or a little more if desired)
Preparation
Preheat oven to 350 degrees
Using an electric mixer, add softened butter and cup of sugar (blend together)
Cream together at medium speed, until light and fluffy, usually 3 1/2 mts
Add beaten eggs, bananas to mixing bowl – continue at medium speed until well combined
Add flour, baking soda, salt and vanilla extract to mixing bowl
Mix on low speed until just combined
Using a spatula fold in the walnuts and chocolate chips to mixing bowl
Pour batter in a greased 9″x 5″ x 3″ loaf pan and bake
(you can use parchment lined pan, if desired)
Baking may vary depending in ovens; at minimum 55 minutes, can range up to 65 mts.
