Chia Buckwheat Pizza, Grain-Free

Delicious, crunchy crust, perfect for lunch or dinner!

Ingredients

Pizza base:
1/4 cup of  Chia Seeds Black
3/4 cup of water
3 tablespoons of buckwheat flour
1 teaspoon of dried oregano
1 tablespoon of Pine Nuts, chopped
2 tablespoons of Raw Pumpkin Seeds, chopped
1 teaspoon of sea salt

Toppings:
1/4 cup of tomato paste
10 sundried tomatoes, whole or sliced
4 sliced mushrooms
4 or 5 sliced bell peppers
1 or 2 teaspoons of dried oregano
1/2 of a sliced Spanish onion
1oz of grated goat cheese
Small handful of fresh basil leaves
Small handful of arugula leaves

Preparation

Combine chia seeds, water, buckwheat flour, oregano, and salt. Mix them well until the mixture starts to thicken up.
Add chopped pine nuts and pumpkin seeds.
Spread out the crust mixture on a piece of parchment paper and form the dough in a round shape.

Flatten to about 1 cm for a firm thin crust.
Bake at 350 degrees for 30 to 40 minutes, until firm.

Remove from oven and add toppings of your choice and bake for an additional 10 minutes.

Grate goat cheese on top and sprinkle the fresh arugula before serving.
